Chocolate Fudge Layer Cake

Makes  4 -  9 in.  round layer cakes

  • 1 cup cocoa
  • 1 cup hot coffee
  • 1 1/3 cup vegetable oil
  • 3 1/2 cups sugar
  • 2 tsp. vanilla
  • 4 eggs
  • 4 1/2 cups flour
  • 3 tsp. soda
  • 1 tsp. salt
  • 2 2/3 cups buttermilk or sour milk

Preheat oven to 350 degrees. Grease and flour 4- 9 in. round cake pans.  (I cut round parchment papers and spray with pan coating, then dust with cocoa) 

Stir together cocoa and hot coffee until smooth and set aside.  Beat oil, sugar and vanilla until well blended.  Add eggs; beating well.  

Stir together flour, soda, and salt; add to mixture alternately with buttermilk, beating until well blended.

Add cocoa mixture; beating well.  pour into prepared pans.  Bake 30 min. or until wooden pick comes out clean.  Cool 10 min. and remove from pans to wire rack to cool completely.

I generally use 3 layers and freeze one or you can make a 2  layer cake and freeze 2.
